The winery's estate wine is simply called Domaine Karydas and was sourced from 35 year old vines and aged for 24 months in French oak (40% new, 60% used). Seeming rather full bodied on opening, with all that Xinomavro acidity and power, this is mouth coating and mouth filling, with classic, Xinomavro flavors and underlying minerality. As it airs, the structure takes over and it seems far less fruity and fleshy. This wine has the concentration to balance its power. Its flavour profile is classic and there is a lot going on here that is very impressive, which makes it a screaming value for the money. It will be astringent and a bit on the rustic side for a while, though. Some cellaring will help. When you crack it open, remember that it is a food wine, not a simple sipper.
