1827 Red is based on Cabernet Sauvignon, a variety which, although French, has been cultivated in the region for over forty years. Vinification at relatively low temperatures and a short maturation created a wine with dense colour, intense aromas of black fruits and cedar, while on the palate is full, intense and structured. 1827 Red is ready to be drunk now but can easily be aged over the next 3 to 6 years. If you wish to enjoy it in its youth, marry it with intense flavours and dishes based on meat, such as roast lamb with potatoes. As it ages, will be more elegant and therefore need more subtle flavours and simpler recipes, like a grilled filet.
